10/10 Toasted Tortilla Wrap

This is one of my go-to meals—super delicious, easy, and healthy. Better yet, it’s incredibly versatile so you can get creative and have a lot of fun with the ingredients you use (I’ll add some suggestions below the recipe) Sweet Viking™ Relish really makes everything better.

I mean, hello? #mouthwatering


2 eggs

tortilla (roughly the size of the frying pan you’re using)

1-2 tbl Sweet Viking™ relish

2-3 tbl cream cheese

butter to grease pan

salt and pepper to taste

chopped parsley and cheddar cheese (optional)


  1. In a bowl, scramble eggs with some chopped herbs (I love to add chopped parsley to things for a pop of color and some earthy flavor). And salt and pepper and whisk thoroughly.

2. In your frying pan, melt some butter and make sure you get enough to evenly coat the pan (and then some if you’re like me and live for butter)

3. While the pan is heating up, spread cream cheese on one side of the tortilla and add your Sweet Viking™ Relish

4. Pour egg mixture into the hot pan and cook on Medium heat for about a minute until it’s starting to firm up and then carefully place the tortilla cream cheese + relish side down onto the cooking eggs and let it cook for a few more minutes. Carefully flip the entire thing so the tortilla side is on the pan and egg side is up **this is why I recommend pan-sized tortillas, makes this part a lot easier** . If you want to add more cheese (duh always) now is the time!

5. Let the eggs cook fully and the cheese get nice and melty and then you want to carefully roll the tortilla up in the pan—then put it on a cutting board to cool down, cut and eat! Learn from my mistakes and let it cool a bit before shoving it in your face and burning the roof of your mouth.

  1. Mix eggs, herbs, salt and pepper in a bowl and set aside.

  2. Melt some butter in a frying pan on medium heat.

  3. Spread Cream cheese and relish on one side of a tortilla.

  4. Pour egg mixture into pan and let it cook until it starts to firm up a bit

  5. Add tortilla cream cheese and relish side DOWN onto egg mixture and allow to cook for a few more minutes

  6. Carefully flip egg+tortilla so tortilla side is now down.

  7. Add more cheese and toppings as you’d like and let it finish cooking/get melty

  8. Roll up, slice and feast.

You can get creative and add tons of more topping in such as:

arugula, roasted red peppers, sausage crumbles, beans, avocado, turkey etc.
