
Chicken Salad à la Barbecue
It’s a chicken salad that is barbecue themed—not to be confused with a salad that has barbecue chicken on it. This is my new obsession and it took a lot of personal strength not to eat the whole batch when I made this recipe.
Let’s get right into it. Also, very exciting—I will be attempting to upload video content to this recipe so hopefully that is a successful endeavor for me. (Video at bottom of page :))
Ingredients:
-2 cups of chopped chicken (I went with rotisserie because I am a lazy cook)
-1/2 cup mayo
-1/4 cup Greek yogurt or sour cream
-1/4 cup #334 Sweet Viking Barbecue Sauce
-2-3 oz softened cream cheese
-1/3 cup drained corn (or fresh if you are so compelled)
-1/3 cup shredded sharp cheddar cheese
-2-4 tablespoons chopped green onion
-salt and pepper to taste
Directions:
Mix everything together and chill in fridge—I do mix the dressing (mayo, Greek yogurt, bbq sauce and cream cheese) separately before adding it to the rest because it blends a little easier, but this is pretty foolproof!
Eat as a salad, with crackers, straight out of the Tupperware—this is a delicious and judgment free zone my friends.
