I mean, beer cheese and Sweet Viking™ relish are just meant for one another, soulmates if you will. The spicy sweetness of the relish balances out the smoky, savory flavors of the beer cheese in such an amazing way.
If I'm being honest, I'm hard pressed to find a cheesy dish that I don't love, but truly, this is something special. So grab some Gouda, and some Sweet Viking™ Relish
and any carb of your choosing really (I went with warm pretzels, because it's a classic).

3 Tbl butter
3 Tbl all purpose flour
1/2 cup lager beer
1 cup whole milk
1 tsp dijon mustard
1 tsp Worcestershire
1/2 tsp garlic powder
salt + pepper to taste
3 cups shredded Gouda (or cheddar)
1/4 cup Sweet Viking™ Relish
In a saucepan, melt butter on medium/medium low heat--once it's melted, start slowly mixing in the flour--once combined, cook for 30 seconds while whisking continuously.
Add beer slowly and continue whisking to help keep clumps from forming and keeping it nice and smooth, Once the beer is mixed in, start slowly mixing in the milk. No, you may not stop mixing! You can do this, I'll tell you when you can stop.
When the milk is mixed in, add the spices and the Sweet Viking™ Relish and *KEEP MIXING* for a couple more minutes. You're almost there! ...Well that's not entirely true, but this is for cheese dip for Pete's sake! Whisk! Whisk! Whisk!!
Are a few minutes up? You're almost ready to mix just a little bit more. Time to start SLOWLY adding the shredded cheese. I went with Gouda, because it's my favorite, but you can go with another melty cheese (like a Cheddar or a Muenster perhaps?) if you so chose. Stir in cheese by the handful until it's completely melted. And you're done! No more mixing, but golly look at those arm muscles! Body by Sweet Viking.
Serve warm with pretzels, bread, spoons, whatever you please. I did decide to be extra and make pretzels from scratch, here's a link to the recipe I used.
Honestly, this is great with crusty bread as well--or just grab some pizza dough and roll it into little balls and bake it in the oven. If you want to be healthy (I do not recommend) you could do vegetables, but honestly carbs for the win.
