I'll Be Spaghetting Seconds

Listen, you and I both know the pun was bad, but its a singular joy of mine in life to subject innocent, unsuspecting victims to my tiresome ways. A girl must have a little fun on Friday night, otherwise all work and no play makes Sweet Viking a dull, er....viking. Also, if you've been here before, then I don't have much sympathy because it's a theme. I keep it to a dull roar!


Anyways, I'm kind of crushing hard on this recipe, it's sort of a lightened up alfredo sauce with a fun twist--plus it's absurdly easy to throw together, especially if you need to feed a crowd.



Ingredients:

box of thick* spaghetti (1 lb) *optional

6 strips of bacon, diced

4 cloves of garlic

(2 smashed, 2 chopped finely)

1 cup chicken broth

1 8oz package cream cheese

2-4 tablespoons Sweet Viking™ Relish

2 tablespoons flour

salt and pepper to taste


1. Go ahead and boil that pasta up--I cooked mine to a little past al dente since I knew I'd want to let it sit in that scrumptious sauce for a bit. Pro Tip: Add the 2 smashed garlic clovesand salt to your water to add a little zhuzh it up (yes that's how you spell it, I googled it).


2. While your pasta is cooking, throw that diced bacon and and chopped garlic into a big pan on medium high heat, ideally a wok if you have one (if you don't I recommend getting one because you will fall in love with it, I stand by these words). Once your bacon is frying and getting crispy, add the flour to the pan and combine well and let it simmer for a couple minutes.

3. Turn your heat down to medium and add your package of cream cheese (I like to break it up into chunks so it melts in easier) and 2-4 tablespoons of Sweet Viking™ Relish depending on how spicy you want it--I did 2 for these photos and it was quite mild :). Slowly add in your cup of chicken broth and mix it all together until it becomes a nice creamy white sauce. If you're wondering why you added the flour, it's to make thickening base so that you can use chicken broth instead of heavy cream.

4. Turn the heat to low-medium. Dump all that glorious drained pasta into your sauce and mix it all together.

Eat and don't even worry about self-control, life is too short. Eat the damn pasta.

Maybe she's born with it, maybe it's a sprinkling of paprika to make the photo pop.
