The longest time will be spent boiling the noodles, which is pretty much instant in the noodle world. Call me old fashioned, but I always have some cheap ramen noodles in my pantry, because they’re pretty great in a pinch—quick and easy.
Using some other pantry staples, you can upgrade this easy meal into something nearly unrecognizable and borderline gourmet…ok maybe that’s a stretch, but it’s a damn tasty comfort meal and its ready in no time so that’s a winner in my book. Highly, highly, highly recommend.
• 3 oz packet Ramen Noodles (I used chicken flavor)
• 2 tbl peanut butter
• 1 tsp sesame oil
• 1 tbl Sweet Viking™ relish
• 1 tbl soy sauce (or tamari)
• Chopped peanuts
• Chopped green onion
Boil those noodles with the spice packet in the water until they are cooked to your liking.
Put hot noodles in a bowl and add peanut butter, relish, sesame oil and soy sauce and mix until well combined.
To garnish and elevate it even more, add some chopped green onion and peanuts on top—you could also use cilantro if that’s more to your liking. If you want to get really, really fancy you could add some protein like chicken or tofu and some julienned carrots for full-on meal.
Otherwise, if you’re tired and hungry and want something fulfilling in no time—stick with the basics. It’s delicious and it will become your new go to easy meal.
